The word comes from the Coptic “pha la phel” (Φα Λα Φελ) where a fava beans version of the current know falafel was eaten during the Roman era 5th century, purportedly meaning “of many beans”. The dish later migrated northwards to the Levant, where chickpeas replaced the fava beans.
