Description

Crunchy dough filled with sweet cream cheese and pistachios.

A common story is that the dish was created, and prescribed by doctors, to satisfy the hunger of caliphs during Ramadan. The story is variously said to have happened in Fatimid Egypt, or in the Abbasid Levant. Nonetheless, the earliest documented “kunafa” word was found in the 13th century anonymous Kitab al tabikh fil Maghrib wal Andalus (books of dishes from Maghreb and Al-andalus) but is nothing else than the Abbasid Qatayif in the 10th century Kitab el tabikh of Ibin Sayar. Which is not a surprising since these books came to influence the culinary processes of Andalusian cuisine in the Iberian Peninsula in the tenth century.
