The origin of this dish is still an open debate. Some story claim that the dish was created 150 year ago in Hama, with it’s original name being “Shish Darak” translated to Gendarme’s hat, while other believe that it has older root and reached the lavant through the Ottoman cuisine with Uzbekistanian origins. The huge similarities between the Azerbaijani Dushbara, Uzbekistani Chuchura, Armenian Mante and Levantine Shish Barak only complicate that debate.
